For as long as I can remember, My favorite holiday treat has been a chewy GINGER MOLASSES COOKIE…

( Think Starbucks…. THAT’S THE WINNER)

However with aprox 320 calories per cookie… I avoid them, and it makes me sad.

I have been on a mission for the last few winters to find THE BEST Ginger Molasses Cookie..

This one is tasty, but hasn’t stolen my heart as THE COOKIE, so I am open to healthy recipe suggestions.

This recipe is as follows:
2Tbsp FLAX MEAL

1 EGG WHITE

1 BANANA

1C SPELT FLOUR

1C OATS ( whole oats)

1/2C BLACK STRAP MOLASSES

2tsp CINNAMON

1tsp GINGER

1tsp BAKING SODA

……………………….. HOW……………………….

1. Mix flax and egg white, set aside

2. Mash your banana, add flour and oats

3. Add flax, egg and molasses, mixing everything together until combined. Add remaining spices and baking soda.

4. Bake your cookies ( I made 20 small cookies) for 25 minutes @ 350.
