Somehow my training session conversations with clients ALWAYS end up revolving around FOOD.
Yesterday the topic was MUFFINS.
My client was going home to bake banana muffins with her little girl, and was wanting to make Pumpkin muffins for herself.
I love Pumpkin and I love muffins and hadn’t baked in quite a while, so I took it upon myself to make these little gems
1.5 SCOOPS QUATTRO UNFLAVUORED ( YOU COULD USE VANILLA AS WELL)
.5 C OATS
5-6 PACKETS STEVIA (OR SWEETENER OF CHOICE)
PINCH BAKING POWDER
.5 C SHREDDED CARROT
.5 C SHREDDED ZUCCHINI
.25 C RAISINS OR CRANBERRIES
.25 C APPLE SAUCE
.25 C PUMPKING PUREE
2 EGG WHITES
COMBINE ALL WET INGREDIENTS IN ONE BOWL
COMBINIE ALL DRY IN ANOTHER BOWL
ADD WET TO DRY AND MIX WELL
BAKE FOR 15-20 MIN @ 350
I MADE 16 MINI MUFFINS ( YOU COULD ABSOLUTELY MAKE REGULAR SIZE, BAKING TIMES MAY VARY, SO BE SURE TO CHECK REGULARLY
