Pumpkin Protein Loaf

Fine.. OKAY…. I give in…

 

IT’S PUMPKIN SEASON… yeah yeah yeah everything pumpkin ALLLLL THE TIME…
I’m not super into the Pumpkin Spiced Latte that all the girls go crazy over but I DO dig a bit of pumpkin in my Protein Pancake, or in PIE form lol.

I figured I like Magnum Quattro… A LOT ( betchya didn’t know that about me:)

So I thought I would put the twO beauties together…. VOILA….and check out the GOOEy chunks of melted chocolate….. mmmmmmmmm

Pumpkin Protein Loaf

 

WHAT YOU NEED:

BREAD LOAF PAN lightly greased with coconut oil

2 Tbsp COCONUT OIL

1 scoop QUATTRO- I USED CHOCOLATE BUT FEEL FREE TO USE WHATEVER YOU DESIRE FOR FLAVOR

1/4C ALMOND BUTTER

2-3 packs STEVIA

1 C PUMPKIN PURE

2 EGG WHITES

Dark chocolate ( I used Dark chocolate covered ginger)

HOW TO:

I used my food processer, use anything you have:)

Mix Coconut oil, almond butter, egg whites and Pure together.

Once mixed well, add the quattro and stevia, blend well and now fold in the chocolate… as much or as little as you like

 

Bake in prepared loaf pan for 20 min @350 ( Check at 15 min to be sure it isn’t over cooking)
